Vicky's Chocolate Ice Cream

Ingredients
seven ounces dark chocolate, sliced
one and quarter cups aquafaba
half teaspoon xanthan gum
half cup confectioners' sugar
two teaspoons vanilla sugar
PROCEDURE
Preparation Time: 15 minutes
Cooking Period: 10 minutes
Ready In: 8 Hours and 30 minutes
Melt chocolate in top of a double boiler over simmering water, mixing frequently and scraping down the sides with a rubber spatula to avoid scorching. Let chill a bit, about ten minutes.
Fill aquafaba into the dish of a stand mixer fitted with a whisk attachment. Beat on high speed till fluffy and quadrupled in volume, about one minute. Put xanthan gum and beat for thirty seconds. Put confectioners' sugar and vanilla sugar; continue whipping till foam is firm and glossy, about two minutes more.
Flip melted chocolate gently into beated foam till thoroughly incorporated. Move to a lidded container.
Let it chill till firm, eight hours to overnight.
