Vegetarian Chili

Ingredients
one tablespoon vegetable oil
one cup chopped onions
half cup chopped carrots
three cloves garlic, minced
one cup chopped green bell pepper
one cup chopped red bell pepper
half cup chopped celery
pne tablespoon chili powder
one and half cups chopped fresh mushrooms
one (twenty-eight ounce) can whole peeled tomatoes with liquid, sliced
one (nineteen ounce) can kidney beans with liquid
one (eleven ounce) can whole kernel corn, undrained
one tablespoon ground cumin
one and half teaspoons dried oregano
one and half teaspoons dried basil
Instructions:
Heaten up the oil in a large bowl over medium heat. Saute onions, carrots, and garlic till tender. Blend in green pepper, red pepper, celery, and chili powder. Cook till vegetables are tender, about six minutes.
Mix in mushrooms, and cook four minutes. Blend in tomatoes, kidney beans, and corn. Season with cumin, oregano, and basil. Put it to a boil, and reduce heat to medium. Wrap, and simmer for twenty minutes, stirring from time to time.
