Exploring a High Protein, Low Carb, Vegan Diet For A While. Got Any Great Recipes For Me?

in #recipe6 years ago

So I have been nudged by my dietitian friend to try out a carefully monitored nutrition programme for one week or maybe longer.. Plus a whole lot more exercise than I have been doing - so this is going to be a really interesting health boost for me.

I have been vegan for over 10 years and have gone through phases of being a purist, with mostly only wholefood ingredients in my diet, with little or no cooking - right through to having periods of relying on vegan junk food (high quality junk food though!) when I am busy or just not so inspired to work in the kitchen. Before I was vegan I tended to be quite overweight - due to a combination of poor diet choices and not enough physical exercise - and once I shifted my diet and started practising ashtanga yoga, my weight dropped pretty quickly, but for years I have been slacking on these fronts.

So as of today I am exercising every day, also doing yoga and meditation daily too - so far it is going well, but the diet will be the real test! The aim is to only use food sources that have a Carbohydrate percentage of less than 5% and as high a protein content as possible. The fat content is also intended to be low. This really cuts the options down, but there are still enough available to have a varied diet. Currently we have a list of ingredients that includes a variety of greens, a few nuts (hazelnuts, walnuts & almonds), almond milk, various forms of coconut, various berries and fruits (not including bananas!), avocados, sea vegetables, mushrooms, tempeh, tofu and various seeds.

We have a few recipes to go on with but will be scouring the web for more options. If you have any ideas that might work, then do let me know. The essence of this is somewhat similar to vegan bodybuilder recipes, but with lower carbs.

Wishing you well,

One of the main sources of protein that need to be investigated are chickpeas and other legumes. These will also be a good source of low-fat carbohydrates, but you may already have it in your menu✌

Yes, Chickpeas are a good option, though the carbohydrate level tends to be a big higher than we are aiming for here. The target of under 5% is particularly low.

As I do not ear meat either my diet tend to be too high in carbs for my taste. I have some digestive problems which limits certain veggies and still looking for the same solution itself. So not much recommending as I struggle to cut carbs but curious about what others recommend.

Aloha! Ok, I am keeping close track of everything being eaten here and the results, so keep an eye on my posts as I will be sharing the results of the 1st week soon.

If you have no problem with Gluten you should definitely try out Seitan.

I think I did something similar to you, but it was more specific; involved supplements. The big deal was the no fat part, because the aforementioned nuts, avocado (and chickpeas) contain a lot of fat.
So spinach, every kind of mushrooms and Seitan + any kind of salad/vegetables (no potatoes of course).

Thanks, my friend here does have to avoid gluten, so seitan is out, but we are finding tofu and tempeh are working pretty well in general. :)

We are not so much looking to avoid fat, but to just keep it fairly low-ish.
