Recipe of the Day, Week No. 45: Egg Toast (Egg in a hole)

Hello, Chefs!

This is @ukpono from Nigeria. Today, I will show you how to make a simple breakfast with any bread, and eggs.

TODAY'S MENU - Egg Toast (Egg in a hole)

Egg toast is a common breakfast food that can be paired with either drinks, juice or fruit salad. This particular variety of egg toast is often called "egg in a hole". That is because eggs are used in the middle as fillings.

This meal is very healthy for kids and students since it is rich in protein. It takes only 20-30 minutes to prepare.

What you need:

  • 4 slices of bread
  • 2 big eggs
  • Curry leaves (optional)
  • 250ml vegetable oil
  • 1 tomato
  • 1 bulb of onions
  • 1 tbsp black pepper
  • A pinch of salt (to your taste)

Tools

  • Non-stick frying pan
  • Spatula
  • Knife
  • Fork and plates

Servings - 2

COOKING STEPS

Step 1: Gather supplies

Start by gathering your supplies from the nearest grocery store. This includes the ingredients listed above.

Step 2: Crack your eggs into a bowl.

It is preferable to use fresh eggs. One of my eggs was old so I had to set it aside and make use of these two for a healthier and tastier meal.

Step 3: Chop your tomato, leaves and onion into small dices.

Dicing your vegetables makes it a easier to blend into the mix.

Step 4: Mix these vegetables into the egg bowl.

Then whisk everything gently with a fork for 60 seconds or until they are evenly distributed.

Step 5: Cut out shapes on the bread with a knife.

I used a table knife to carve out this rectangular shape. You should pay attention to the edges to avoid breaking the bread's frame.

Step 6: Turn on your burner and keep it on medium heat.
Place your frying pan on it before adding 2-3 tbsp of vegetable oil into the pan. Some people use butter instead. You could try this if it matches your taste.

Step 7: Allow the oil to heat a bit before placing your bread on it.

Scoop in your mix into the hole. Be sure to gently press the sides with the spatula to prevent the mixture from spilling from the bottom.

Step 8: Flip over between 2-5 mins when the underside is well cooked. Remove it once both sides are golden brown.

Step 9: Garnish it to your taste.

I decided to use tomatoes but you could add carrot, cucumber, etc.

What is egg toast without a glass of milk?

PS The meal came out so tasty that my sister had to ask for more.

Making this meal requires very little effort and expertise. You could get a bit creative here as well. Either by trying out new ingredients or using other equipment like toasters, etc.
