Mediterranean Rice Salad

Decided to make my own version of Mediterranean rice salad after attending the farmers market in downtown San Louis Obispo. Would be nice to get a little cottage studio downtown for a few days so I could make use of a kitchen. I know they have places like what I am referring to but they aren't always in the nicest shape. Just a place for a few days off from the beaches and camping on the coast.

Wanted to come up with rice salad mixture so went with a Mediterranean flavor. I cut up some red and yellow bell peppers, green onion, greek olives, and a little bit of cucumber and carrot. I like mine a little heavy on the lettuce, throw some croutons on there and drench the mixture with balsamic vinaigrette. Really healthy and it tastes great!
