Left over prime rib sandwiches

After a wonderful Christmas dinner with friends and family last night, today brings a new day. And the new bring prime rib leftovers. I have a loaf of sourdough bread a few ciabatta rolls left over from yesterday's festivities. In a few hours I plan on making myself a couple prime rib sandwiches.

I'll first start by cutting the prime rib into thin slices, I'll do the same with the ciabatta bread. I have some pepper jack and cheddar we'll see how much I have left of each before deciding which one to use. Little mustard and mayo, salt and pepper and I'll be good to go. What a wonderful time of the year, happy holidays.
