A delightful and well-known Bengali treat is phuchka. It is widely accepted in the cities of Bangladesh and West Bengal, India. Depending on the area, numerous names are used to describe it. In Bangladesh, it is called "Fuchka" or "Fuska". Different regions of India have fuchka that is similar. While this dish is known as Pani-Puri in West India (such as Maharashtra), it is known as Gol-Gappa in North India. In a round petal formed of wheat and semolina, a fuchka is typically served with tamarind water and filled with spicy, boiled potatoes. The dish's name has changed over time according to region and how it is done. Tamari water is occasionally substituted with mint water in certain areas. Oysters are one of the components in Panipuri in the Indian state of Odisha, even though they are uncommon in potato dishes like Fuchkar Pur used in West Bengal.

The spiced potato filling is placed into a little hole in the puffed petal. The filled fuchka is served in a dish with sour cream surrounding it after being dipped in tamarind water. Indian Panipuri is done in a shalwar bowl. Usually, five to eight puffs are used to hold each plate. Fuchka is marketed in populated regions on pushcarts with four wheels. Shoppers can sit down and even use the awnings. Water will be served according to plans. Little ones who take orders from patrons and help the prepared fuckas are there with the leading vendor. They can be seen in public places such as parks, streets, bus stops, roadsides, schools, colleges, etc.

As Fuchkar Pur, potatoes that have been boiled and spiced are typically utilised. To make this pura, boiled potatoes are combined with salt, coriander powder, cumin powder, dried chilli powder, and green chilli powder. It is also mashed with some tamarind water to improve the flavour. Frequently, soaking chickpeas and peas are also included in addition to this. By dissolving tamarind in water and adding lemon juice, tokajal is made.
