Yummy cuttlefish with rice and herbs
This is a dish really tasteful an can be done with various seafood. I think that cuttlefish have a very rich and tasty flavour, thus this dish came out really amazing. Also, if you are too daring, I think you can use the cuttlefish ink, but as I had guests, I decided to go for the conservative version.
So here it is.
Ingredients: 1kg of cuttlefish well cleaned and cut into pieces (we used a scissors at home!), 1.5 cup of rice for pilaf, 2tbsp of chopped dill, 2 tbsp of chopped parsley, 3 medium onions chopped, ½ cup of olive oil, salt and pepper, 2.5 cups of vegetables broth, ½ lemon juice, ¼ teaspoon of dried oregano
I use a pressure cooker. First, I sauté the dill and the parsley, along with the onion in the olive oil. I add the cuttlefish, 1 espresso cup of water, salt and pepper and close the pressure cooker. I allow them to cook for 10’. I open the cooker and put the vegetables broth and the rice. I let the food simmer for about 15’ until the rice is prepared. In the end I add the lemon and the oregano.
