Sugar – free Cake: Dedicated to my steemian friends who want to eat healthy and skip the guilt!

Well, actually, this cake, is not so sweet – it is rather kind of sweet.. But if you are not a fan of sweet sweets, you will like it. Plus it has nutritious ingredients, like tahini, honey and carob honey!

I know that eating healthy is a trend; nevertheless if you take a look at the historical facts that comprise our nutrition for centuries, you will see some peculiarities. What do I mean: I cannot escape thinking the Man’s involvement in gradual reduction of cultivation of various useful and sustainable plants, at least in my country, such as the locust or carob trees, or the zea cereal, the latter largely cultivated in the antiquity and now being extinct. Instead, it has been substituted by massive production of mainstream cultivations such as common wheat, perhaps not as rich in dietary fibers, magnesium, proteins and vitamins.Carob products, on the other hand, were used to feed people during the wars, or periods of famine. Carob is of high nutritional value and, what’s more, its sub-product can be a substitute of the cocoa beans and therefore chocolate, but skipping the caffeine. It is also rich in vitamins and minerals.

Now, let’s move to the recipe; this cake recipe is a very easy one, while you can add any nuts you like.

Ingredients: 350gr self rising flour, 50ml olive oil, 100ml sunflower oil, 3 tbsp of honey, 1 tbsp of tahini, 50ml carob honey, 250 ml mountain tea in room temperature, a pinch of Himalayan salt, ½ small tbsp cinnamon. Optionally I added a handful of walnuts which I broke with my hands and a handful of raisins. Also, next time perhaps I will add some orange zest.

The making is very easy. I mix all liquids together and then I add the flour and stir altogether. I place the mixture in a small baking tray. I bake in the oven in 180C for 35 minutes.

For fun, you can sprinkle some caster sugar when you serve. I didn’t, as I wanted to keep it plain.

Can I substitute the sunflower oil for coconut oil. coconut is lighter and has less of a taste and is healhier

That's a healthy nice cake, good for diabetics or dieters as it won't spike insulin levels/blood sugar. It looks tasty though :)

This is great! Rising levels of diabetes and other chronic diseases everywhere can be largely attributed to a poor diet, and especially to massive overconsumption of sugar.

And you are helping to demonstrate that we don't have to suffer unduly to reduce our sugar intake
