Pie pizza – Drooling!
This is a test we made the other day at our restaurant with my friend CK. It turned out amazing!
So, this is a pizza which resembles a calzone, i.e. there is phyllo on both sides and in the middle we put the stuffing we like.
Ingredients: 2 round thin phyllos (preferably not ready made), 2 tbsp of tomato paste, half tomato in slices, 4-5 mushrooms also sliced, 2 slices of goats cheese cut in rough pieces with your hands, 2 slices of prosciutto cut in rough pieces with your hands, 2 tbsp grated cheese, pepper, salt, 2 tbsp olive oil
So we chose a shallow tray for the oven, where we put one phyllo. We spread the tomato paste, the tomato slices, the mushrooms sliced, the goats’ cheese in pieces, the prosciutto slices in pieces, pepper and salt to taste, the grated cheese and, last, the second phyllo. Don’t press the top phyllo on the pizza you have created. Just place it gently on top. In the end, we put a little bit of pepper on the top side of the phyllo.
We place our pie in the oven and bake in medium fire. Once the pie is ready from the one side, we turn it upside down. We sprinkle a little bit of pepper and olive oil and put again in the oven. I am not going to give you an exact time as it highly depends on the oven and the thickness of the phyllo. It took us about 15-20’.

im sure you could improve on it though,
its 4 pizzas stacked with a stuffed crust edge.
Mine was with less phyllos..as if you can have a diet once eating pizza!!!

πολυ εξυπνη ιδεα, πως ειναι ζεστη-κρυα? δηλαδη σαν ζεστη τα υλια φευγουν οταν την τρως η μενουν σταθερα και οταν ειναι κρυα θυμιζει ποιο πολυ πιτα η κρυα πιτσα? ( βλεπεις κανω εμπειρικες ερωτησεις :p )
Οταν ειναι ζεστη τα υλικα ειναι λιωμενα αλλα δε φευγουν κ κυριαρχει το κατσικισιο που εμενα μ αρεσει πολυ! Κρυα δεν ξερω γιατι την φαγαμε γρηγορα!
