SuperMom Idea: Happy Food

One of the most loved dinners I've ever made is happy stuffed peppers. My kids keeping asking and asking for me to make these for them, and I love that there is something all of us find fun and tasty for dinner. I think I originally found this idea by poking around on Pinterest and seeing a face carved into some food item... and that's when I decided that stuffed peppers needed faces.

It's really simple to do. I am going to suggest that you find a good recipe for stuffed peppers, or at least for the filling part since mine is slightly different every time. The basic steps go something like this:

  1. Select your bell peppers (any colour is fine). Wash them well, carefully cut the top of the pepper off, and clean out all of the inside parts of the pepper. You don't want any of the white fluffy bits or seeds in there.

  2. The most important step...carve out cute little faces in your peppers! Positioning these is important because faces cut too low won't be seen and are likely to spill the filling everywhere when they are baking. You want to aim for the upper middle of the pepper. Similarly, try to keep the holes for the face a little bit smaller to prevent the filling spilling out.

  3. This is when you want to boil your peppers. I place my peppers in boiling water until they are just covered and keep them there until they start to lose some of their bright green colour. This usually takes about two minutes, but keep an eye on them so they don't get soggy.

  4. Take your peppers out of the water and make sure they are drained well, place them standing up in a baking dish, fill them with the stuffing from your recipe, and place them in your oven to bake according to your recipe!

TADA!!!!

I originally made these for a Halloween dinner for my kids and they really were the biggest hit! Try it out and let me know what you and your kids think.

NOTE: An idea I haven't tried out yet is to replicate those hilarious and gross carved pumpkins that look like they are throwing up. I know my kids would love this! It should be really simple to just cute the mouth of the pepper a bit bigger and purposely allow some of the filling to spill out. You might also try this cutting part after the peppers have been baked to cut down on mess in the baking pan and make serving easier.
