Nice informative video. The little things are called Rakers and they are there to help clear the saw dust from the cut. You are right in what you discovered. They should be taken down a notch with each sharpen as far as I know because of the angle of the cutting tooth. I work with chainsaws in ice and usually remove them completely for a more aggressive cut.
