Mammoth Monday | Fried Chicken, Traffic Accident, & Nice Day Outside!

Today was beautiful! The air was crisp cold and clear, with nice clouds hanging all around. I got to spend most of my day in this small rural town near the foothills and seeing the mountains more up close was refreshing.

Well, all that despite the farmers burning old trees from the orchards around the area. Despite that, the smoke was actually kind of interesting to watch as it slowly wafted up into the atmosphere, merging with the clouds.

I was out working on the edge of town, and you can really see so many elements of the area. The mountains, the existing town, the fields, and over to the side there, one of the new homes being built I was working on.

Here’s another view looking up the street. As you can tell, I was really enjoying the day and being “out of town” enjoying new surroundings. This photo kind of reminds me of the old west boom towns, though the way things are going, I don’t think it will collapse into a ghost town anytime soon.

I also snapped this shot of some almond blossoms in the orchard by the side of the road. They’ve only just started blooming so it’s not quite the explosion of blossoms that makes a really nice scene to take a photo of, but they’re still nice to look at anyways. That’s actually a popular scene for people to take portraits around here, either for family photos, engagement, new baby, etc... Typically they sit on a blanket in the lane between the trees with the blossom encrusted branches arching overhead.

On my way home from work, I drove by this bad accident. There were at least four cars involved, and several ambulances, fire engines, and police crowding the area. The traffic in the other direction was backed up about half a mile, it was a big mess. I hope no one was seriously injured in the accident!

When I got home, I made some fried chicken for dinner. To keep the carbs down, I used crushed pork rinds, Parmesan cheese, and spices for the “breading”.

I had that with a simple kohl slaw, just cabbage, onion, and celery with mayo, little mustard, splash of apple cider vinegar, and a sprinkling of pyure sweetener.

I also got my hair cut finally, it was getting kind of gross-long.
