Name: Papaya Salad
Country: Thailand

Info: It is a very popular addition to many dishes, but it also serves as a full dish. Just tell the cook that you want a full dish and you will get a set with rice and some extras. It can be served with an egg, fermented fish, snails, small crabs and other seafood. The sour-sweet taste of the salad fits perfectly into fish who balances its spicy taste.

To prepare the salad finely chop papaya, add small tomatoes, chilli, roasted peanuts, lime, palm sugar and a mysterious ingredient - powdered, dried shrimps!

Thanks to these ingredients, the taste is amazing and very original!

The salad generally functions as a dessert, in contrast to typical Indonesian salads which are generally the main food. One of them is pecel. This vegetable and chili sauce dish is the main food that is usually eaten along with rice cake or rice. In Indonesia, pecel has a variety of types in almost every region, especially in East Java. The types of vegetables used vary. One of the most famous pecel is Pecel Madiun. pecel pecel madiun lies in the vegetables used, namely boiled cassava leaves. In general, vegetables found in pecel are cooked vegetables such as cassava or kale leaves, long beans, bean sprouts, turi flowers, and many more. While the sauce is formulated from peanuts, garlic, chili, orange leaves and tamarind. The pecel is usually served with fried tempeh and peanut butter or anchovies.

Country : Jawa Barat - Indonesian

Karedok is a traditional salad from West Java that is very popular. all the vegetables have been boiled and steamed first, the vegetables in the karedok are all served raw, so the fresh taste of the vegetables is still very pronounced on the tongue. The contents of vegetables in this karedok have no green leaves like spinach or kale, but only contain bean sprouts, long beans, cabbage pieces, and cucumbers. The sauce is made from fried peanuts which are rubbed and given spices of salt, chili, brown sugar and galingale. Usually karedok is eaten with kupat and shrimp crackers.

This is literally my favorite salad, usually prepared at Christmas, its main ingredient is shredded hen previously baked or boiled. mayonnaise is added and some vegetables such as boiled potatoes and carrots cut into brunoise. You can also add a touch of mustard a touch of honey and green apple in brunoise and peas.

In Poland we prepare a very similar salad for Christmas! We also add carrots, potatoes, celery, apple, mustard and peas. Instead of hens in our version you will find eggs, so also very similar.

The difference is the acidified cucumbers. They are a bit like picles:



But those cucumbers have been pickled in a brine and left to fermentation for some time. We add to them dill stems and garlic. They have an acidic, deep taste and perfectly break the taste and "heaviness" of mayonnaise. They are also an ideal addition to potatoes.

I'm surprised that in such faraway countries we have so similar salads. I'm very happy because I run FOODspedition for such surprises. 😉

Name : Gado-gado
Country : Indonesia

Gado-gado at a glance is the same as pecel, which is both filled with cooked green vegetables poured with peanut sauce. But the difference is, vegetables in gado-gado are far more diverse than pecel. Vegetables in gado-gado usually consist of kale, spinach, cabbage, squash, boiled potatoes, boiled eggs and tofu, which has been cut into cubes. For the peanut sauce, it is made from fried peanuts which are pulverized until smooth, then add salt, tamarind juice, shrimp paste, chili and brown sugar. The difference with pecel bean sauce is not using orange leaves and added shrimp paste. Usually gado-gado is equipped with shrimp crackers and is eaten with kupat or lontong.

Lotek is a cooked version of karedok, aka the vegetables have been boiled first. Lotek is also a typical traditional Javanese salad. vegetables in lotek include spinach leaves. The peanut sauce is also exactly the same as peanut sauce, which is a kencur spice which makes the taste of the peanut sauce more distinctive. Jam eaten with kupat and fish crackers, lotek also comes with pieces of bakwan and boiled potatoes.
