Mexican Style Street Corn (Elote) Recipe
Fresh corn on the cob is in abundance this time of year. This is a recipe for Mexican street corn - Elote. Great as an appetizer, snack or side dish. See the VIDEO RECIPE at the end of this post. Enjoy.
Mexican Style Street Corn (Elote) Recipe
INGREDIENTS:
Fresh corn on the cob
mayonnaise
cotija cheese / parmesan cheese / feta cheese
chili lime spice or chili powder
limes - juice and zest
wood skewers
First I husk the corn and cook in boiling water for 10-15 minutes until done.
Take a wooden skewer and pushing in the end for a handle.
Coat corn with mayonnaise, cheese, then seasoning and a squeeze of lime juice and / or sprinkle lime zest.

OR, you can take the corn off the cob and serve in a mug.

In México we use a very cheap cheese called "Queso rallado". Other kind of cheese maybe an interesting twist for a mexican like me.
