The Nigerian Ewedu Soup

in #foodtrail9 years ago

I am not really a foodie, or should I say that I like food but I am not good at preparing it.
I learned how to prepare a Nigerian soup today and this soup is commonly consumed by the Yoruba's in this part of the country.

I like the Ewedu soup because it is very easy to prepare, especially for someone like me who is lazy when it comes to cooking., and I also love it's ability to draw properly.
The ingredients required to prepare Ewedu soup are; ewedu leave, locust bean, salt, water, potash, Maggi and of course the local broom known as Ijabe.

The ewedu leaves are carefully picked and kept in a neat bowl, it is then thoroughly washed with neat water in order to remove any form of sand whatsoever.

A neat pot is placed on fire with water inside the pot, the ewedu leave is then added into the water and left to boil for some minutes, the potash is added to make it soft and locust beans is as well added.
After some time, use a spoon to check if the leaf is soft enough.

After confirming it's softness, bring down the pot and with the aid of a local broom, begin to mash the leaves in the pot, add your salt and Maggi cube as well.
Place back on heat for just 5 minutes, your Ewedu soup is then ready to be served with stew.

I hope I am correct with this recipe, although the person who thought me this method practiced it, and it has turned out delicious and tasty.
