Baby Corn Gravy

Ingredients

  1. Oil (6 tea spoons)
  2. Chopped Baby Corn (10 pieces)
  3. Bay Leaf (1)
  4. Cinnamon (1 inch)
  5. Cardamom (2 pods)
  6. Cumin (1 tea spoon)
  7. One Large Onion (Finely chopped)
  8. Ginger Garlic Paste (1 tea spoon)
  9. Tomato Pulp (2 cups)
  10. Turmeric Powder(1/4th tea spoon)
  11. Red Chilly Powder (1 tea spoon)
  12. Coriander Powder (1 tea spoon)
  13. Cumin Powder(1/4th teaspoon)
  14. Salt To Taste
  15. Water (1 cup)
  16. Cashew Paste (1/4th cup)
  17. Garam Masala(1/4th tea spoon)
  18. Coriander (2 table spoon, finely chopped)

Step1: Add 3 tea spoons of oil in saucier pan, then add the chopped baby corn on the pan and sauté for 1 minute medium flame. Remove and keep it aside.

Step 2: Add 3 tsp of oil in the same pan, then add Bay Leaf, Cinnamon, Cardamom and Cumin in the pan and sauté till it turns aromatic. Add finely chopped onion and sauté till the onions turn golden brown, add ginger garlic paste and sauté well and add tomato pulp, mix well, cover and let it cook for 15 minutes until it thickens and oil separates. Add salt to taste, turmeric powder, red chilly powder, coriander powder and cumin powder. Sauté in low flame until oil releases, add 1 cup of water and Cashew paste mix well. Then add the roasted baby corn, stir well. Cover the lid of saucier pan and let it cook in low flame for 10 min.

Step 3: after completely cooked, add garam masala and coriander. Mix well, now the dish is ready. Serve it hot.
