I follow the age old method of great masters in the past by starting the painting in dead colors using a value scale of 7 grey colors to build the image. When the under painting is perfect I start with opaque skin colors and work in layers until I finish the painting with 7 glazing layers.
This is a very slow process but if you want to achieve a good representation of the person this is a fool proof way to succeed.
