VEGAN - Stuffed Capsicums/Peppers!
This is one of those recipes that I normaly do every now and then.
Ingredients:
cooking oil
10 potatoes
6 capsicums
1 onion
1 small teaspoon of salt
2 small teaspoons of Vegeta
pepper
Step 1.
Grate up the potatoes, chop up the onion, place into a bowl, add one small teaspoon of salt, 2 small teaspoons of Vegeta and sprinkle with pepper.
Then mix well and let it sit for 10 minutes, so that the potatoes let their "water" (liquids) go.
Step 2.
Cut the cpasicum tops off and clean them out.
Step 3.
Once the 10 minutes have passed (from step 1) use your hand to grab the mix, squeeze it so as to drain out all the liquids and fill the capsicums, & place in the baking tray (oil the tray down first).
Once all the capsicums/peppers are in your tray, brush them down with a bit of cooking oil.
Step 4.
Place in preheated oven, 250 degrees celsius.
Once you put them into the oven, straight away turn the temperature down to 200 degrees celsius.
Leave them in there for 60 minutes. turn them over a few times so as to ensure that they get baked evenly from all sides.
I like to serve these with sour cream!
This was the first time I have made these since comming to Australia, will make sure to get this back on the menu at least once or twice a month.
don't like vegan style but it seems delicious!
