Pork Roast With Rice.
Today I went to the shops and saw that the butcher had porkbelly on special, so I bought a piece that I thought would be about the right size to feed our family of 5, 2 adults and 3 children.
This is a typical roast that I make when I see porkbelly on sale.
I have made roasts so often that I do not have any exact measurements, depending on the size and type of meat I have I determine how much of what to use, I know my childrens likes and dislikes for herbs and spices.
I am sure that you can use different herbs and spices to the ones I used here, based on what your family likes.
Ingredients
A nice sized piece of pork belly!
2 onions
Salt
Vegeta
Paprika
Pepper
Garlic herbs
Coriander
Cooking oil to mix the herbs and spices
Note: I add the above herbs and spices in small amounts, you can do as you like, no exact rule applies to a roast, everyone likes a roast done their way.
Step 1
Preheat the oven to 200 degrees celsius.
mix up all your herbs and spices in cooking oil.
Chop up your onions into rings (I like to cut them into halves too)
Cut up the meat in 1cm slices
Place into the baking tray.
Pour the herbs and spices over the meat.
In every 1cm cut place your onions.
Step2
Cover the tray with aluminium foil and bake for 40 minutes.
Every now and then make sure to baste the meat in its juices that are in the tray.
Step 3
After 40 minutes take the foil off and let it get a bit of colour (5 minutes in the oven should be OK)
Step 4
Remove the meat from the tray and place on a plate, make sure to cover it with the foil so it doesn't cool down too fast.
Put rice into the baking tray and pour water until it covers the rice.
Then place into the oven and once the water has evaporated the rice is cooked (baked).
Step 5
Then place your meat onto the rice and leave return it into the oven for another 5 to 10 minutes.
Your are now ready to serve your meal!

Looks fantastic!! I have never taken rice and put it into the meat juices to cook. I bet it has amazing flavor being cooked like that.
