OH Crumpets!
It’s the weekend baby! While hubby and I used to spend weekends in bed watching series after series, now our Saturday and Sundays are spent entertaining our three-year-old; exhausting but rewarding! Right now, the boys have gone off to play and I have some free time to write…FINALLY! So, I thought I would share how we started our morning with a somewhat hearty breakfast of, you thought it, crumpets!
Saturdays are usually our tea and toast mornings, but today I thought I would put on my fancy pants and whip something a tad more exciting up. I had all the ingredients required as well as a pre-schooler who was eager to be entertained. So, we got cooking.
Cooking with kids is fun, but oh so messy, which for them, is part of the fun really. Not so much fun for the person who has to clean up however. Oh well. Now that I do have the dishes and counter-tops washed though, I thought I’d share my quick and easy crumpet recipe with you.
Make sure you have the following ingredients before you begin:
- 2 cups of self-rising flour
- Half a cup of sugar
- 2 eggs
- 1 cup of milk
- 2 tablespoons of cooking oil (I used coconut oil)
- You will also need a non-stick frying pan, some oil for greasing and a spatula.
Directions:
- Mix all of your dry ingredients together.
- In a separate bowl, beat the eggs, milk and cooking oil together.
- Stir the dry ingredients into the egg mixture a little at a time.
- Give your batter a good whisk to make sure there are no lumps.
- Heat some oil (just a teaspoon or so) in your pan.
- Use a spoon to add blobs of batter to your pan and watch as it flattens and starts to bubbles.
- When you see the bubbles appear in the centre, then you know it is time to flip the crumpet over and allow it to cook on the other side, until golden brown.
We had our crumpets with Maple Syrup, but you can get fancy and add cream, strawberries or even bacon to yours! I have also tried this recipe with added blue berries and bananas, they came out great!
Here in South Africa, we call the small and thin pancakes “crumpets”, but I know in many other countries they are regarded as pancakes, or flapjacks. What do you call them in your country?
It’s no lie to say that we have started off our weekend with full stomachs and in happy spirits! There’s even some left overs for lunch, so that’s another meal sorted! Happy eating!
