Tasted the Thai Summer Enoki Sauce Linguine
When I got home today, my daughter really wanted some type of pasta so I whipped this up for her and the family. In the summertime, I love using juicy fruits such as oranges and pomelos to cook for the sweet and sour flavors. If done correctly, you get to taste the bliss of citrus nature. If I'm freestyle cooking for my kids, a lot of my dishes are health-based for them.
I learned these skills from taking the "Just Cook for Kids" course by Maya Adams so I focus only on sweet, salty and sour flavors.
My weapons of choice are always my Victorinox kitchen knives, although for this dish the 9-inch knife was an overkill. I was pressed for time so I went with familiarity.
I love prepping all the ingredients first so I can mentally visualize either the healthy or unhealthy factors in what I'm making. In perfect moderation, where the flavor great enough to not add anything but also so healthy that they almost think something is missing. Almost.
This time, I didn't use any honey because the oranges already covered enough of the sweet flavor and I dislike overly sweet dishes. Once the base sauce of sauteed enokitake mushrooms, sausage & garlic is complete, the fresh flavors and ingredients can be added. The result was marvelous and the whole family just ate great.
