Let’s talk Food: My way to cook a Perfect New York Steak

When I first came to America, I have found that normal chain restaurants (i.e. TGI Friday) don’t cook meat the way I wanted. Even if you were to order the steak medium-rare, they would still give me a well-done, hard-to-bite steak. I personally hate wasting food, so I got stuck between enjoying my food (which means I need to return the steak), or just suck it up and “enjoy” this super overcooked steak in front of me. With that said, after returning the steak for two times, I have decided that they are hopeless. Why pay $20+ USD for something you don’t enjoy? That never makes sense to me and if I can make it better, I would have to be mentally insane to step my feet into their doors again.

當我剛來美國的時候, 發現有幾家連鎖餐廳煮的牛排不是我喜歡的感覺, 比如TGI FRIDAY. 就算你跟他說了要五成熟, 他們還是給你全熟的。我個人討厭浪費食物, 於是我就在浪費食物和硬吞中間掙扎。我試過兩次這樣的經驗後就決定不再去這些餐廳, 浪費20多美元去迫自己吃這些我完全不能享受的食物。


I enjoy cooking very much and I believe we must enjoy eating it. So today I want to share with you my steak recipe – which I have learned from my Korean friends.

於是, 我決定自己煮牛排, 煮菜其實是我享受的, 今天, 我決定分享我的牛排食譜, 其實是我的韓國朋友教我的。


Ingredients 配料:
  • New York Steak, around 2-2.5 inches thick (make sure it is rested in room temperature) 紐約牛排,約2-2.5英寸厚(確保它在室溫下休息)
  • Orange Juice (amount, about 1/10 of the BBQ sauce) – or pineapple juice, pear juice….. 橙汁(數量約為燒烤醬的1/10) - 或菠蘿汁,梨汁......
  • Korean BBQ sauce for Steak 牛排韓國燒烤醬
  • Chopped Garlic 蒜茸

Step #1:

Clean the steak, and then marinate it with the Korean BBQ sauce, and add the fresh orange juice into the sauce to marinate the steak. You will marinate the meat for around 1-2 days, and then take it out before use to let the interior of the steak return to room temperature.

步驟1:清理牛排,然後用韓國燒烤醬醃製,然後將新鮮的橙汁加入醬汁中醃製牛排。 您將肉醃約1-2天,然後在使用前將其取出,讓牛排的內部恢復到室溫。

  • Tip #1: The orange juice will not only add sweetness, but also works to tenderize the meat.
    提示#1:橙汁不僅可以增加甜味,還可以使肉嫩化。

  • Tip #2: Resting the meat back to room temperature before cooking makes it easier to cook the inside.
    提示#2:在烹飪之前將肉放回室溫使其更容易烹煮內部。


Step #2:

Preset the grill to around 350 degrees. Make sure the steel is really hot before placing the steak on the grill. Cook one side for around 6 minutes, close the lid, and turn it around when the color turned golden.

步驟2:將烤架預設為350度左右。在將牛排放在烤架上之前,確保鋼材真的很熱。煮一面約6分鐘,蓋上蓋子,當面頭的顏色變成金色時將其翻轉。

  • Tip #3: When there is no color, there is no flavor. Make sure the color looks like the ones in the picture above.
    提示#3:當沒有顏色時,就等於沒有味道。 確保顏色看起來像上圖中的顏色。

  • Tip #4: Do not turn your steak so many times, the more you turn, the older it gets.
    提示#4:不要多次轉動牛排,轉得越多,肉質越老。


Step #3:

Repeat - Cook the other side for around 6 minutes, close the lid. You can then test and see how "done" the meat is. The firmer the meat, the more "done" it is

Step #4:

Stand the steak up and cook the edges, make sure the fats are cooked.

Step #5:

Resting the steak after done, so that the valuable moisture within the meat stays within the meat.

步驟5:完成後放好牛排,這樣肉內的水分才能保留在肉內。
