My first food recipe on Steemit! Italian traditional “pesto alla trapanese”

Summer has finally come and our kitchen is filled with fresh and inviting aromas.

I love cooking, it is a passion in my Italian family. Good food is an istitution here in Italy and share good food a must!
I got a food blog, Speccifood, where, when I have time, I post my fav recipes.

To inaugurate the season also here on @Steemit, we prepared this fast and tasty "pesto alla Trapanese", a recipe from the Sicilian tradition that we tasted for the first time at home to Sicilian friends.

It's a quick dish to prepare, with a few recipe ingredients and really great!IMG_20160529_132744.jpg

Directions:

  • In a large pot, boil water for the fresh pasta.

  • In the meantime, carefully wash tomatoes and basil leaves.

  • If you have time, peel the almonds by taking a pot of boiling water and let them bake for a few seconds. Scrape and peel them. It is not an indispensable operation, you can also put them in the mixer with the peel.

  • Grate the Parmesan cheese and the pecorino cheese.

  • In a mixer insert the chopped tomato, basil, salt, pepper, almonds, cheese mix, peeled garlic cloves and a couple of tablespoons of oil.

  • Blend everything until a thick and compact compound is obtained. If it is too dense to add some oil, if too liquid (it might happen if the tomatoes are too juicy) add more almonds and cheese.

  • Pour fresh pasta and freshly cook it, leaving a staple of cooking water aside.

  • Add the water to the pesto and mix, pour on the dough and allow to keep it for a few seconds on slow fire.

Put it in a nice plate et voila, good appetite!IMG_20160529_133234.jpg
