HAM & POTATO SOUP
Ingredients
- 2 cups cooked ham, cubed
- 4 strips bacon, cut into small pieces
- 1 cup of diced onion
- 1 cup of diced celery
- 1 cup of diced carrot
- 3 1/4 tablespoon flour
- 3 medium potatoes, cubed
- blackpepper
- 1 teaspoon thyme
- 6 cups chicken broth
- bay leaves
- 2 cups heavy cream
The steps
- Cook bacon over medium-heat in a cast iron pot. Cook until it becomes crispy.
- Add onion, celery and carrot. Cook until it becomes tender.
- Reduce heat and add flour. Keep stirring for about 2 minutes.
- Add ham, thyme, black pepper and potatoes. Stir well.
- Add chicken broth and bay leaves. Cover and bring to boil..
- Reduce heat again and cook it for 30 minutes. Make sure it is still covered.
- Remove the bay leaves then add the cream. Stir well and bring to simmer.
- Serve and Enjoy!
