CHICKEN PESTO AND ZUCCHINI PASTA
Ingredients
- 4 medium zucchinis
- 1 cup cherry tomato, halved
- 2 chicken breasts, skinless, boneless and chopped
- salt
- pepper
- 1/2 lemon, juiced
- 4 cups fresh basil
- 12 cup olive oil
- 1/2 cup pine nuts
- 3 cloves garlic

The steps
- Add basil, garlic, pine nuts, olive oil, salt, lemon juice, pepper and parmesan cheese in a food processor or blender. Blend until the texture becomes smooth, then set aside.
- Peel long strips from zucchini until you see the seeds using a vegetable peeler. Set aside.
- Heat a cast iron skillet over medium-high heat, then add a little oil.
- Add chicken breasts then season with salt and pepper. Cook until the chicken becomes brown, then turn off the heat.
- Add pesto, zucchinis and cherry tomatoes on top of the chicken breasts. Combine well.
- Serve and Enjoy!
