Sotanghon Con Caldo
Ingredients
- 2 tablespoons vegetable oil
- 2 cloves of garlic, puree
- 100 g onion, finely chopped
- 125 g red tomatoes, finely chopped
- 1 L of boiling water
- 100 g of sweet corn seeds
- 2 tablespoons rice, soak 20 minutes, drain
- 1 kg medium shrimp, peeled, leave the tail
- 1/2 tsp oregano
- 2 tsp salt
- 1/2 tsp pepper powder
- 50 g of frozen peas
- 1 kg potato, peeled, diced 2 cm
- 8 chicken eggs
- 250 ml of condensed milk
- 1 teaspoon chopped parsley
The steps
- Heat oil, saute garlic and onion until it is fragrant and wilted. Enter the tomato, stirring until wilted.
- Add water, corn kernels, and rice. Cook until cooked rice.
- Enter shrimp, oregano, salt, pepper, peas and potatoes, stir well. Cook until the potato is soft and the shrimp is reddish.
- Break the chicken eggs one by one, do not stir. Cook until the eggs are cooked.
- Pour milk, stir well but do not boil. Lift.
- Sprinkle the chopped parsley. Serve warm
