Lovely Logic makes some Sugar/Yeast free quick bread
Making breads using whole products has been a learning experience for sure. Lovely Logic has tried out many different recipes and flour methods to see what works best for making a yeast and sugar free bread. Those two things are usually crucial to making good bread, but with experience and some know how Lovely Logic will show how she makes her bread two ways.
She has narrated her video and walks us through the steps explaining as she goes about making her food.
First using 1 cup of Almond Meal, and 2/3 cup of Buckwheat, Millet and Amaranth grain. Pink salt, two eggs at room temperature setting them out 30 minutes in advance. For butter we are using unsalted grass fed butter. We are using almost milk at one cup to add to this. Setting this out as well is a good idea before starting so the milk can reach room temperature. Dont forget about them or they may spoil. We just want them to not be as cold as where they were in the refrigerator.
Using a burger bun tray to cook the dough, take the room temperature eggs and add them to a blender. Something electric would be a good idea or it may not mix well. Add the milk as well, along with the melted butter. Add the flours in and attach the top of the blender, will run in the blender until it turns into a thin batter. Its kind of like thin pancake batter.
Grease the tray using coconut oil, and pour the thin mixture into the trays. Otherwise it may be difficult to remove them once they have baked at high temperature.
A second batch is made as well, using just 50/50 Buckwheat and Almond flour. It gives it a darker texture. Using 100% of one or the other is a bit much. But mixed its much better. The recipe is the same just changing the flours. Once combined blend for about 20 seconds using a powered blender. We have a Ninja brand we use for our batter mixing. Bake at 425F for about 20 minutes and then turn the heat down to 375F for about 12 minutes.
So those are two ways to make some sugar and yeast free flour. The first one using a few different flours, the second is just buckwheat and almond flour. Uses of this bread is limitless, you can make sandwich bread, burger buns, or add some peanut butter and fruit to it and have a nice snack.
