CHOCOLATE LAVA CAKE

They say the way to a man’s heart is through his stomach… but let me just tell you that if you whip up this little cup of heaven, you won’t be wanting to share… with anyone.

This has been my go-to “emergency” (read: severe chocolate cravings) last minute dessert as it’s quick, simple and you’ll probably already have all these ingredients in the nooks and crannies of your kitchen. I’ve used this recipe many, many times but I like to alter it a bit each time. Once I’ll add a shot of coffee (it brings out the chocolate), add a bit of amaretto or some extra hazelnuts… You get the point: make it your recipe!

Now, onto….

The Ingredients:

makes 4 servings – which is about enough for 2 people 😉

– 120 grams of dark, semi-sweet chocolate (make sure you go for a good quality chocolate, it makes all the difference)
– 115 grams of butter
– 40 grams of ground hazelnut
– 2 eggs
– 30 grams of sugar
– 40 grams of all-purpose flour

Optional Toppings:

– Fresh/frozen mixed berries
– Vanilla Ice Cream

The Steps:

  1. Pre-heat the oven to 180°c.
  2. In a double boiler, melt your chocolate.
  3. Meanwhile, whisk together the sugar and eggs, until light and fluffy.
  4. When the chocolate is fully melted, take it off the boiler and melt to butter in the chocolate. If necessary you can put the chocolate back onto the boiler quickly but it shouldn’t really be necessary. It should be a runny and very glossy consistency.
  5. Add the sugar and egg mixture into the chocolate bowl and mix throughly.
  6. Sift in the flour and then add the hazelnut into the mixture.
  7. Spray ramekins with non-stick spray or butter the ramekins.
  8. Fill ramekins!
  9. Bake for 8-12 minutes at 180°, the middle should still have a dip. Do not let it bake for any longer as the center will not have delicious, melty lava. It may not look fully cooked but trust me it is, let it cool and set for 5-10 minutes.
  10. In the meantime you can grab a few frozen berries and melt them into a delicious sauce.

Lastly, chuck on a scoop of ice cream, because why the heck not!
