Kitchen Witch Thursdays - Sinfully Good Cookies

This is what I like to refer to as a 'crowed sourced recipe'. My roommate, @bluebeaniejean, actually found a really good cookie recipe online and linked it to me. I found a lot of it interesting and slightly deviated from a standard cookie recipe so I decided to hit up Google for similar recipes. I compared various recipes I found and from that compiled my own, which is where this recipe came from.

Much of the knowing how much of what comes from my years as a home cook and a lot of experimentation (and failures) to get these just right. And now I'd like to share it with everyone, because I make these a lot and everyone I've made them for absolutely loves them :D

You'll Need The Following;

  • 1/2 cup oats - about 2 packets if you're using instant oatmeal from a packet like I did
  • 2 1/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup/2 sticks melted butter
  • 3/4 cups brown sugar
  • 3/4 cups granulated sugar
  • 1 tablespoon vanilla
  • 2 eggs
  • Optionally things like nuts, chocolate chips, and candy to add flavor and such

First thing's first, preheat your oven to 350 degrees.

Then take your oatmeal, flour, baking soda, salt and cinnamon in one bowl. Mix your melted butter, both sugars, vanilla and eggs in another. Your wet bowl will look like the one on the right, it will be very soupy and liquidy because of the melted butter.

Now, here comes the secret I literally never read anywhere on any recipe that asks for melted butter - let it sit for about 15 to 20 minutes or longer to get to room temperature from melted. If you try to mix them together right away the mix will be thin and the cookies will be more like pancakes because the dough won't hold up.

Once your wet mixture is a little more solid mix in the dry ingredients and your additives. The dough will have a peanut butter like consistency when you're done mixing.

Now here optionally you can chill your dough. A lot of people suggest it, but the only thing I've found it done for this recipe in particular is make the cookies hold more of the shape of the scoop instead of flattening out a bit like in the picture at the top. So if you want one or the other is up to you for this one.

Get your cookie sheet ready however you like. I used a cooking spray as evidenced here (and forgot to take pictures of the first patch on the sheet hence the obvious holes) but you can also use parchment paper, tin foil, or whatever else to make cleanup a little easier.

Keep it to a dozen at a time. This makes about 4 dozen cookies if you use a cookie scoop like I did, maybe a little less if you have a spoon or something similar instead of a scoop.

Bake these suckers for 10 minutes and....

....bring them out when they're done. Let them sit about five minutes on the sheet before trying to move them....

....to a cookie rack! Or a plate, if you don't have something of this sort. Just get them off the cookie sheet and somewhere else to set up.

Give these cookies another 10 minutes or so to cool then eat and enjoy!

I've found the secret, aside from letting the butter cool in order to get them to not be pancakes, is the oats. They give these cookies a nice, chewy texture. As does the length of cooking, 10 minutes is enough to get them crispy on the outside and soft on the inside.

These are my favorite cookies to make. There's nothing in them inherently that can cause allergy problems aside from the easy to substitute butter and eggs, and you can add whatever you want to make them whatever kind of cookies you like from chocolate to nuts or just plain. You can even frost them if you like, they aren't half bad with frosting and end up being very nice for it actually.
