Tasty, Creamy Scallop Carrots

Yesterday a team of branch members prepared a Christmas luncheon for the 55+ Seniors group which meets at the branch every week to play cards. We’ve done this now for about nine years and every year, the one dish from the year before they always ask for is Scalloped Carrots.

In our rush to get the 52 diners served on time, I didn’t snap a picture of the dish but I’ve found one that looked pretty close. The instructions that follow are scaled down from what we used to prepare enough for sixty people. We get to eat too.

My ingredients may not be precise enough for some of you but after ten years of doing dinners in our branch kitchen, I’ve become very much a person who uses recipes as a guide rather than a precise roadmap.

The Recipe

So, here goes:

2-3lbs of carrots
1 can Cream of Celery soup
2 stalks of celery
1-2 onions
Grated cheese
Breadcrumbs
2-3 tablespoons melted butter
Salt & pepper to taste

Peel and slice the carrots. Boil them until they are soft but still firm. Drain.

Peel and chop the onions, slice the celery and saute in a frying pan until soft. I suggest you add your salt and pepper while doing this keeping in mind there is salt in the soup so you don’t want to use too much. I like a touch of garlic, it depends on your flavour preferences.

In a casserole dish, mix together the carrots, can of soup, onion mixture and the grated cheese. Sprinkle the breadcrumbs across the top and drizzle with the melted butter. Bake in a 350F oven for about an hour. Cover with foil for the first 30 minutes and then uncover to allow the breadcrumbs to toast during the last half hour.

So, What Else Did They Eat?

We served up ham with a cranberry glaze, roast turkey, mashed potatoes, gravy, the scalloped carrots, steamed broccoli, coleslaw, cranberry sauce and rolls. They finished off their meal with pie and ice cream and then spent the afternoon playing cards.

Many compliments were received on the meal so I guess they were happy.

Looks it, I've never heard of it :)

there are some recipes around on other sites. One of the ladies who used to work with the team provided it originally. We work from her recipe.

I'm biased but I'd say it is ... our guests must think so, they keep asking for it
