Curried Tofu @senseicat
Enjoy this flavorful tofu and I love to serve it with fresh basmati rice.
1 pound of extra firm tofu sliced into 8 equal pieces
1/2 cup vegetable broth
3 Tbsp. rice vinegar
2 Tbsp. olive oil
2 Tbsp. soy sauce
1/4 cup curry powder
1 tsp. cumin seeds
In a large mixing bowl, combine all marinade ingredients and whisk together.
Preheat oven to 400 degree.
Place tofu on baking sheet for 20 minutes and flip over and bake 10 more minutes.
Place in the boiler for 3 minutes for extra chewiness.

Do you know any Thai coconut “Tom yum” thyme soups to make that are peanut allergy free? Got any recipes for that? I love Thai food but my gf is deathly allergic to peanuts so we never go to Asian restaurants
