SUSHI VIRGIN in the Mountains
So, as a proud Southern California Native it shames me to admit this: I have never made sushi in the history of my ever, ever.
I know, right? How could any self respecting Californian ever utter those words aloud? Let alone in the crypto-universe for all to see and judge! Well, I am here to tell you that I have remedied this terrible lapse in my moral fiber. I have made sushi at last! Would you like to see the process? Let's watch:
Prologue: So, my wonderful boyfriend took our little family (complete with toddler) up to a multi-million dollar Keystone cabin here in beautiful Colorado for a little vacation! While up there, being on a (now extended- thanks natural health doc!) gluten free diet, I decided to make sushi!
This picture was actually my second attempt- much less 'mungo'! Haha
Ingredients:
Outside- Sushi rice, Sushi Nori (seaweed)
Inside- Tilapia, cucumber, & avocado
So, first thing's first: two things I very much should have done and very much didn't do.
- Use saran wrap on your bamboo rolling mat! It makes cleaning soooooo much easier.
- Form the rice so it is exactly the size as your seaweed, any bigger creates something that you will see in coming pictures.....
....be warned, it's not pretty....
But before we get to that! (I know, the suspense is killing you), prepping.
I bathed the cucumber slices in lemon juice, and sprinkled them with Celtic Sea Salt. Yes it matters, yes go buy some right now. The flavor of natural, unprocessed wet salt will turn you from kitchen king to everyone-lay-me-right-now demi-god of the house. Trust me.
Rolling: start rolling until your filling is surrounded, then press down firmly and evenly. Look at the side of the roll to make sure the edge is touching the middle. Once secure, continue rolling!
Remember how I warned you about the rice? This is what happens:
Mungo Sushi!!!!
Oh well, it was delicious even though they were fist-sized!

Pro tip: sautee your fish in hoisin or teryaki sauce, some lemon juice and season with a touch of sage & Oregano. You'll thank me.
