A TRIP TO NTAKE BAKERY
Ntake was started by two directors,Mr and Mrs Gaster Lule Ntake in the late 1990's at a place called Najanankumbi on Entebbe Highway.
It was out of its development that Ntake started different branches across the country for example Ntake Bakery Mbale, Masaka,Entebbe,and the flour mill at Nalukolongo Industrial area in Kampala.
Ntake bakery,mbale branch was one of the best places that I visited during my highschool times.
This bakery was started in 2002 as a depot, then opened officially as a bakery on 19th may 2011.
It's located in the Eastern part of Uganda,Mbale district, at central division,plot 74/76 along pallisa road.
Vision: "Growing into East Africa's business Regional cartel"
Mission: "To provide quality confectionery productswith a view of uplifting the standards of living"
Objectives of the Ntake Bakery
To produce high quality products.
To improve on the standards of living.
To provide employment opportunities.
To accumulate more capital for expansion.
To make profits for directors.
Ntake bakery (Mbale, Uganda) produces items like bread, cakes, Sponge rolls, cookies, etc and many other confectioneries.
Along side the above items, it also produces Toilet paper(aa and AAA) and also a leading producer of flour known as kaswa.It also produces delta natural mineral water
Let's take a look at the raw material store of Ntake bakery.
This store is where raw materials are received through an order note from Nalukolongo.
After the raw materials are received, an invoice is made,then a receives note is made.
The raw materials in this store Include Eggs, cooking oil,Baker's fat/prestige(softens the products), sugar from Brazil(changes the taste of the products), salt(changes the taste of the products),fruits,from iran(these are added in bread), Yeast from Pakistan (improves on the size of the products),food color, it's yellow in color, (turns the products yellowish),lemon flavor(scent for yellow bread), Vanilla (scent for cakes), spices from Dubai (scent specifically for cakes), baking powder from Kenya(improves on the size ofthe products),simsim seeds (put on simsim bread) posho, beans,rice,(for meals) Ntake polythene (for packing products)
The production process.
This process shows how various products are produced through various stages at Ntake Bakery using various machines.
The machines involved in the production process include:
Coolers-these are used for cooling products.
Rolling trays-these are used for storing products.
Slicers-uses for slicing products for example bread.
Mixers-used for mixing the ingredients into a dough.
Dividers-used for dividing the dough.
This is how some of the products are made.
Bread
A mixture of baking flour, baker's fat, salt, sugar,flour,all in the appropriate measures,is put into a mixer filled with water,the mixer moulds and rollsthe dough and then yeast is added. It's then put in trays and left for forty minutes so as to expand.
From where they are put in the oven for one hour, after it ready it's then taken to the cooling room to cool, after which it's sliced using the slicer and then packed into Brake polythene.
Bans
A mixture of baking flour, wheat flour salt,sugar,baker's fat,is out into the mixer filled with water. The mixer moulds and rolls the dough and then yeast is added.
It's then weighed and out into a divider to divide it into small pieces after which it's leveled and cu,put in the prover to expand for thirty minutes it's then put in the oven for fifteen minutes.When it's ready it's taken to the packaging room for packing using Ntake polythene.
Cakes
A mixture of baking flour, baker's fat,sugar,are mixed in the mixer with water,
Yeast is then added.
A mixture of eggs and spices is added after which it's put in basins.
It's then put in small sets that are greeced with baker's fat after which it's taken to the oven for preparation.
It's then taken for packing using Ntake polythene in the packaging room.
That was a great trip I had because I learnt a lot from it that I have been able to present to my audience on steemit.
