Who is your favorite chef in your family contest by @sallyelvis

Greetings wonderful steemians, it's my first time creating a contest post and I'm delighted because cooking is one of my hobbies. The favorite chef in my family? Wow, that's difficult to choose, will I say it was my mom? Oh I should say I am because my mom left and I took the mantle. Yeah, she passed it on to me @sallyelvis as her first daughter which makes me the favorite chef for this contest because she's passed.

As the first daughter in the family, it is naturally expected of me to be the closest to my mother and because motherly role is normally passed down to the first daughter where i hail from, it was only a norm for me to do most of the cooking whenever my mom was not at home or busy with other things.

I started cooking at a very tender age of 8 when my mom will work on weekdays far away from home and is only available on weekends and as such I have to be the one preparing meals at intervals for the family with the help of my aunt then who will tell me what ingredient to add at what time to add them and whatever the outcome in taste, my siblings will be the judge and one thing was consistent, their encouraging words. My elder brother will say "you're trying" he was 11years old at the time, while the younger ones will just thank me for giving them what satisfies because they were too young to know taste 🤣.

Saturdays were my favorite days because mom will be available and all I'll have to do is watch her make meals upon meals ranging from soups, stew, to homemade cakes, pies, to stock up the refrigerator which will ease my work as I'll have to prepare light meals like rice for either breakfast or dinner.

Below is a picture of my pancake ingredients in a nutshell.

I learnt lots of recipes from my mom and improved on my cooking skills as I cook and also from criticisms from my aunt which happened to live with us at the time being a caterer. By the time I became an adolescent, I would be given monthly allowance for family feeding and this helped me to be judicious in spending because I have to ensure there's meal for everyone till next salary is paid. I became more prudent and ended up saving a lot of money for myself as next allowance will come without me finishing up the old one. I grew up to become very passionate about cooking because it gives me joy to see the smiles on people's faces when they've enjoyed a good meal because I love good meals myself.

I learnt recipes for both local meals(Nigerian) such as banga soup, afang soup, edikang ikong, tapioka snack, Nigerian jollof, etc and intercontinental meals such as fried rice, stir fry, vegetable sauce,etc this got me a special place in the hospitality department of my church.

This morning as i lay on my bed thinking about this contest I decided to prepare a simple breakfast in honor of my late mom's cooking skill because pancakes was her favorite breakfast meal with a cup of tea.
Pancake is a flour-based meal, it has variety of ingredients such as sugar to give it a little bit of sweetness, egg serves as protein and also helps the mix to be softened, milk adds the protein and the flavor to increase the nutrition, nutmeg gives me the kind of flavor that makes me want to start eating it before I'm done frying, a pinch of salt to taste, the onion and the pepper gives it the spice, butter further softens it then acts as my oil because apart from using oil to wet my pan, I love frying it with the butter serving as oil and then with a cup of tea, coffee or soft drink to cool off with it.
I'll explain the ingredients that gives me my perfect pancake mix:

INGREDIENTUSES
FlourSieve your flour into a dry and clean bowl
SaltA pinch of salt to taste
SugarSufficient quantity of granulated sugar as you desire to sweetness
WaterSufficient quantity to paste
EggsBeaten eggs in a separate bowl
MilkLiquid milk can be poured in when ready but skimmed milk should be liquidified with water in a measure
ButterMelted butter to give me a yellowish color
Vegetable oilI use it to wet my pan before I start frying.
PepperFor the spice though very little.
OnionsThe spice
NutmegAdded as a natural healthy flavor

How I prepare my pancake

  • I sieved my flour into a clean and dry bowl
  • Add a pinch of salt to taste
  • I add sugar to the quantity I want it's sweetness
  • I add a little quantity of water and mix using a spatula till the flour gives a thick paste

  • I add sufficient quantity of milk and continue stirring
  • I beat my eggs in a bowl and add and stir it clockwise

  • I add my melted butter and stir till well mixed and by now the thick paste is not as thick as it was but all smooth

  • I add my already chopped onions and pepper

  • Grate my nutmeg into the paste as desired

  • I wet my pan with a little quantity of vegetable oil
  • Boom I'm ready to fry and I scoop as I desire into the pan and leave it on the fire for maybe one to two minutes, turn both sides till it dry and crunchy as though baked. Some people like it oily but I like it crunchy that's why I add no extra oil after wetting the pan.

Conclusion
Pancake is a yummy light yet filling meal that one can take any time of the day, it's made with several ingredients of nutritional value as seen above and it's easy to prepare and less time consuming. I made this to remember my mom who'll want nothing but a tray of pancakes for her birthday.
Though I had no extra hand to give me perfect pictures, I made my pancake, served myself on the go and oh as always, I could hear me say yummy!

Quick question @sallyelvis, how where you able to manage the feeding of the family at a young age ? Any tip that can help upcoming home keepers.

Thank you for reading through, i started quite young but it built strength, responsibility, independence and confidence in me. Here are a few tips that helped me.

  • I write down what to buy before the income arrives and buy in bulk, bulk is cheaper and more economical.
  • I was prudent in spending as every expenditure was carefully planned for.
  • I avoided impulse buying.
  • I don't tolerate wastage.
    My siblings were cooperative though.

Ha! My dear that one is a long gist, we're still survive na. All I do is set priority list, if that thing isn't necessary, forget it , I'm not buying because the increase is price of goods is weekly where I am o. A cup of rice is almost 200 in naira.
