A yummy quinoa recipe
I made this lovely quinoa dish a few days ago, and it was HUGE hit!
I was trying to recreate a healthier version of a really good pasta dish I had a few years back- it was a little creamy, had a few zucchini types, and a bit of a sour taste that complimented the zucchinis perfectly (look at me, sounding all chef-like).
I love yellow zucchinis, but they're not very common at the grocery store around here, so when I stumbled into a bunch of beautiful yellow zucchinis last week, I could hardly contain my excitement.
I made this quinoa zucchini dish planing to eat it through the week, but it was so good, and we were all so hungry, it was finished the same night. But note that it makes a really big portion- definitely a food prep kind of dish.
So lets get to the actual yummines:
Ingredients:
2 cups of quinoa
4 cups of water
2-3 green zucchinis
2-3 yellow zucchinis
10-20 mushrooms
1 onion
3-6 garlic cloves
1/2 a lemon
Whatever other veggies you want to add
spices: salt, cumin, olive oil, apple cider vinegar.
Instructions:
- cook the quinoa in the water with a pinch of salt, for about 20 minutes (until water is gone).
- chop the onion and cook on a large pan until slightly brown
- chop the zucchinis, mushrooms and garlic and add to the cooked onion
- add seasoning to the veggies: 1 1/5 spoons of salt, 1 spoon cumin, 1/2 lemon juice, splash of apple cider vinegar and olive oil
- stir and let the veggies cook for a few moments until they soften a little
- add 1/4 cup of water and stir, let cook for another few minutes, until veggies are cooked but not too soft
- add the cooked quinoa stir together and serve:)
This turned out seriously good, it's healthy, vegan and rich with protein from the quinoa. What more do you need?
