Rujak Nibong, adalah rujak yang paling fenomenal dan sangat dicari oleh wisatawan lokal dan luar kota, kenapa dinamakan rujak nibong ? Hal ini disebabkan karena letak penjualan rujak ini di daerah Nibong, Aceh Utara.
Rujak ini tak jauh beda dengan rujak pada umumnya, dengan potongan buah-buahan segar kemudian di campur dengan bumbu yang terbuat dari campuran kacang,manisan, cabai juga bahan tambahan lainnya.
Tersedia dua pilihan, dimana ada rujak colek dan juga rujak cincang
