STEEM WARS - Day 4 - Orange
So it's coming up on half time in this war and just like any good country sporting battle, the kitchen has had it's workers cutting up some orange wedges for all the contestants.
It's not often that we think too much about specific colours in our food, but in recent times there has been a bit more focus on it through some of the food programs having challenges and an increased amount of talking about freshness and vibrancy in our food, be it the fresh produce or the cooked meal.
When it comes to raw produce, the colour orange, and Australian homes, most of us would think Carrots and Pumpkin. Both have been staples of the family roast for as long as I can remember. More recently, Sweet Potato has also become something that is regularly showing up with the roast, and like the other 2 as a general 'veg' in the standard 'meat and 3 veg' that is still very common.
We will also use Pumpkin to make that wonderful and thick orange coloured Pumpkin Soup, which may even have some of that other food thing that turns everything orange in it, Turmeric, which gives a wonderful flavour to the soup. This spice has become more heavily utilised in the Australian kitchen over the last 20 years, and there is no wonder why with the flavour that it can impart into a dish and the colour that it can add to fish or cauliflower.
In the recent trip back to the 80s, we even saw mention of the classic dish Apricot Chicken, whose sauce could be decidedly orange thanks to the use of apricots and/or apricot nectar to make it. This fruity dish also reminds me that we have a bountiful tropical region which provides us with a sometimes divisive, but in my opinion, delicious fruit in the mango. Some varieties are more orange than others, but they are certainly a good representation of our north and are found in many dessert menus around the country.
I think those food options should see us through to a victory in the end, without even trying to lay claim on any of the wonderful dishes we have available to us from all of our nearby neighbours
