Jaggery Pudding | 5% for SL Charity
Most of us like the sweetness that jaggery has. Most famous thing is eating a piece of jaggery and drink tea. Or maybe drink ‘Belimal, Nelli’ or any other drink with it. These jaggery are made out of a liquid collected from coconut or fishtail palm. We call Fishtail palm as ‘Kithul’. A recipe I found as a kid and this one is one of my favorites. Because it is easy to prepare. And a different dessert from something we really like.
You will need:
To make coconut milk get a large coconut and make it thick. Then grate the jaggery and add it into the coconut milk and stir it until dissolves. Add vanilla or clove powder if you like it. Then stir it at medium heat and let it boil. When mixture starts boiling, get the gelatine which has liquidized and add it. Then mix it well and add into a bowl.
Let it cool before putting in the fridge. Here it comes after few hours 😋. Can you see two layers in the pudding.
Yeah it looks beautiful as well as yummy. Jaggery and coconut milk we have used are separated as layers with the help of gelatine. ah.. don't worry it is not completely a coconut milk layer it is mixed with jaggery also. It also taste sweet. if you don't want to feel it more like jello, then reduce about 10g of gelatine and it will make the pudding more soft and taste more of jaggery and coconut. I used 30g because my sister prefer it kind of jello.
