Our Famous Summer Sausage is Almost Done!!!!
It has been a while since I walked down to take a look at our summer sausage so today I thought I would go take a look and see how it was doing. The sausage has grown a lot of mold on it which enhances the flavor. Zac @mericanhomestead, informed us of the fact last year.
Last year when I did this I could have sold some new colors to a crayon company and I could do the same this year if I wanted to. I anyone works at the crayon factory I am willing to talk with you at anytime! (LOL)
It almost looks like the sausage has grown a sweater around themselves.
Here is the bottom view.
We laid down some cardboard so that way when the sausage dripped it wouldn't stain the concrete floor. These are not dripping nearly as much as they did last year. (We must have gotten better at tying the knots on the bottoms of the sausages)
Last year I wiped mold off of the sausage weekly but it just kept coming back faster than it did this year. I will also be doing a post when we demold and package for the freezer.

I had no idea they would get mold on them! If I tried that, and saw that mold, I probably would have figured we did something wrong and throw them away. Very interesting! Thanks for sharing.
Very interesting indeed! Home curing has been something I've wanted to learn about for years. I haven't gone beyond jerky and pemmican...
