Geotjeori (Korean Style Spicy Salad) Recipe
Hey guys. It's the time of the year we should eat lots of salad before it gets warmer I'm trying to make salad once a day or even twice a day these days, and the reason is that I couldn't eat lots of fresh food while I was self-quarantined, and also my body is craving healthy & fresh dishes especially after I exercise in the morning.
This Korean Style of Spicy Salad is definitely my go-to salad for especially when I feel like I'm going be sick of eating salad haha. It always brings all the appetite back after you have one bite. If you have visited a Korean BBQ restaurant you probably have seen this Geotjeori there. 90% of the Korean BBQ restaurant serves this salad
I love having this not only with Korean BBQ, but also just simply with rice, eggs, and any kind of meat. I always make this salad for Christmas dinner as well ☺️ It goes really well with turkey or chicken. My salad is always the most popular side dish on Christmas dinner ❤️ Hope you enjoy this recipe!
Korean Style Spicy Salad

Ingredients
• 150g lettuce
• 150g kale
• 1/4 cup cherry tomatoes(cut in half)
• 1/4 cup carrot (finely julienned)
• 1/4 cup pepper (finely sliced)
Ingredients for spicy dressing (mix together in a bowl except for sesame oil)
• 1 Tbsp sesame oil
• 2 Tbsp Gochugaru(Korean red pepper powder)
• 2 Tbsp soy sauce
• 2 Tbsp white vinegar
• 1 Tbsp honey or sugar (optional)
• 1/2 Tbsp minced garlic
Instructions:
1. Wash and rinse the lettuce (you can use any kinds of greens as you want), and kale with cold water. Drain. Tear the lettuce and kale by hand into bite-size pieces. You can use any kind of greens for this salad. You can have this simply with rice, or I highly recommend you to try making this when you have some kind of greasy meat.
2. Make the spicy salad dressing by mixing Gochugaru (red pepper powder), soy sauce, vinegar, and sugar or honey until the sugar fully dissolves.

Mix the vegetables in a large bowl. Coat the salad with 1 Tbsp of sesame oil.

Toss vegetables with the dressing and serve immediately. You can sprinkle some sesame seeds on top of the salad as you wish.Note:
