The Chicken Enchilada Omelette
One day you're rummaging through the fridge and only see some eggs, cheese, and leftover taco meat from the other day. What can you make? A fun, easy omelette that will satisfy your hungry stomach. The chicken enchilada omelette.
Start by warming an 8" skillet to medium-low temp. Crack 3 eggs into a bowl and whisk well.
When skillet is warm, add 1-2tsp of cooking oil (bacon grease or cannabutter preferred). Spread oil around pan well, then pour the eggs into the middle.
Immediately after adding the eggs to skillet, add 2-3 tablespoons of leftover taco/enchilada meat and spread well. Now just add some pepper jack or colby jack cheese on top.
When the egg is cooked mostly through, use a spatula to fold the omelette in half. Now it will be done in a few minutes.
