Classic Cornbread
Sweet, moist, golden, and fluffy, this delectable side dish is a well known favorite. Perfect served with stews, soups, and almost every meal; it’s even great at breakfast, slathered with butter and served with a fried egg.
Everyone has a cornbread recipe in their family, this is the one scribble on stained notecards and jotted in the margins of recipe books in my family:
Ingredients:
- 4 tablespoons butter, melted
- 1 large egg (room temperature)
- 1 cup of milk (room temperature)
- ¾ cup sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup flour
- 1 ¼ cup yellow cornmeal
- Preheat oven to 400℉. Spray a 8 inch round baking dish with cooking spray and set aside.
- Whisk together the egg and milk in a medium mixing bowl. Whisk in melted butter.
- Whisk in sugar, baking powder and salt.
- With a wooden spoon, stir in cornmeal. The batter will be lumpy, be sure not to overmix
- Pour batter into prepared baking pan.
- Bake for 25-30 minutes.
