Those of you who have been to Vietnam or are based there have undoubtedly had more than one bowl of this heathy Vietnamese soup. If this sounds like you please don’t be shy to admit it in the comments underneath the article! I certainly would love to hear what you love best about it and when was the last time you had it for instance?

The pho soup in Vietnam is available literally anywhere, from the side of the road in the middle of the night to being number one on the a la carte menu in a local air-conditioned restaurant.

The pho soup is what many of us picture when hearing street food after having backpacked around Vietnam for a good few weeks, which never seems enough though to grasp the vibrant food scene. I think I see myself as Rick Stein in a way.

Every now and then whilst in Vietnam you are lucky to have just had one of the best pho soups so far. Then you can’t wait to go back with more of your friends and of course travellers you actually just met in the hostel across the road.

The pho soup sold by the food stalls scattered around town usually costs less than a dollar and it is ever so fresh and filling at the same time.

There is a jug of drinking water in the middle of the table which you can help yourself to whilst waiting for your heartwarming meal. I have had very interesting conversations over pho soup in Vietnam and I was even given fantastic photography tips.

Believe it or not I make it at home here in England a couple of thousand miles from Vietnam.

Here is a list of the ingredients which will comfortably serve 2 people.

• 1 jar of pho paste (You can make the paste yourself but if you find it pre-made from a supermarket it is much quicker.)
• 1 rump steak
• 1 pack of noddles
• a selection of vegetables (I used pak choi, mange tout, spring onion and a chilli but you can always add other veg like bean sprouts, mushrooms, baby sweetcorn.)
• 1 lime
• a handful of fresh coriander

Follow these nine steps and you will end up with a tasty bowl of pho soup.

  1. Empty the jar of pho paste into a saucepan with a litre of water and mix throughly. If you want to add some extra heat you can add freshly chopped ginger or chilli.
  2. Bring the mixture to a boil then reduce the heat and simmer till the liquid has reduced by half.
  3. In a hot pan sear the steak on both sides. Then put it on a board to rest. Remember not to cook it too much as it will cook further when you pour the hot broth on top.
  4. Slice your vegetables and place them into two bowls.
  5. Cook the noodles according to the instructions and share between the bowls.
  6. Once the steak has rested, thinly slice it and place it on top of the vegetables and noodles.
  7. When your broth is nearly reduced enough turn the heat up and bring it back to a boil.
  8. Divide the hot broth between the two bowls which will cook the vegetables for you in the bowls.
  9. Serve with a lime wedge and coriander to finish.

Two days ago I read an article about the 25 best soups in the world. There was Pho Soup from Vietnam :) It's great to read your detailed post about this soup while I was wondering about that soup :D
It's lucky that the Pho Soup is cheap when its ingredients are so rich. Firstly, I congratulate you for daring to try this soup at home. It looks delicious, good job ;) Also, I admired the food photos that look like an advertising shoot :)

Thank you ever so much for the positive feedback my friend @serap The other day I walked past a Vietnamese restaurant here in London called Pho. I was lucky to capture a young Asian girl walking past it. I wish I took this image earlier as I would have definitely included it in my pho soup post. Anyway, there is always next time. I am curious to find out though which soup was listed as number one in the world in the article you read?

The number one was Banga Soup from Nigeria :) Have you ever tried it? Unfortunately, I haven't had this soup, yet :/ This soup is rich in seafood. It must be tasty :)

No way! I am not a photographer, and the produce in my northern NY town is fresh like used bananas. Your post is inspiration, and I’ll take it to the kitchen and create:)

This makes total sense and I respect it. I am pretty sure that you two will enjoy a night-in.

We do, but would prefer a night out. Fewer of those these days with that nasty virus crashing dinner parties.
We have a big winter storm heading our way. Pho must be postponed. It’s oats and eggs for the Mother Hubbards and half a chicken carcass for the cat:)

This sounds like a happy cat which I can easily picture enjoying the carcass. Earlier today I discovered though that a mischievous cat quite likes to do its business under the butterfly bush in our garden. It did it twice at least based on the evidence left. Now a gin and tonic later it is less annoying. We had half a duck in Chinese style pancakes with hoisin sauce, cucumber and spring onions. Same here about eating out. We are booked for dinner in two hours from now, just the two of us. This virus changed our lives, so many became less and less social unfortunately. We are off to a family holiday here in England the start of February, celebrating a birthday as well so I really hope that it won’t get cancelled because of restrictions which was the case last year. Stay warm and safe!

Oh we will. And enjoy the birthday! I’m sure restrictions will relax.
And yes, the gin and tonic helps send all minor annoyances back to “why did I ever care?” My medicine comes from sipping my father’s 100 proof bourbon. He’s an amateur distiller who makes an excellent anti-worry juice:)

You have once again prepared some unusual magical dish.

And today my mother cooked borscht for lunch from the autumn preparation "borscht dressing". This is what we cook in autumn from vegetables from our garden so that we can cook soup faster in winter.
