Tomatoes stuffed with vegetables.
I am very addicted to tomato, its sweet-sour taste is an explosive taste on my palate, I also take advantage of the season, to get tomatoes of very good quality. So I share with you this rich recipe very easy to prepare and eat cold and we can accompany them with some bread or cookies and a good cup of green tea. Stuffed tomatoes with vegetables.
Ingredients:
- 4 tomatoes
- black olives
- 2 carrots
- 1 white celery
- 3 hard-boiled eggs
- parsley
- mayonnaise
- mustard
- salt and pepper
Preparation:
We make a small cut in the one part of the tomato to support it in the plate. Then in the other face a bigger piece is removed and it is emptied inside. We leave them on top of kitchen paper.
Apart in a container put chopped olives, grated carrots, chopped celery, chopped hard-boiled eggs and a little chopped parsley. Mix well with several tablespoons of mayonnaise and a teaspoon of mustard; also salt and pepper to taste.
With everything well mixed, stuff the tomatoes and keep the preparation for a while in the fridge. Remember that they are eaten cold.
