8 chicken drumsticks

7.5 ml (1 ½ teaspoons) of cayenne pepper

1 cup (250 mL) mayonnaise
15 ml (1 tablespoon) sambal oelek
5 ml (1 teaspoon) of honey

In a bowl, combine the butter milk, salt and spices. Add the chicken and coat well. Cover and refrigerate at least 12 hours.

Preheat the fryer oil to 160 ° C (325 ° F). Line a baking sheet with paper towels.
Remove the chicken from the marinade without drying it too much. Coat the chicken in the flour mixture. Dip a second time in the marinade and re-coat the chicken. Shake to remove the excess. Reserve on a baking sheet. Fry four to five pieces at a time for about 15 minutes. If you are using a thermometer, it should be 82 ° C (180 ° F) when inserted in the center of a piece. Drain on the paper towel. Continue with the rest of the chicken.
