FRIED COD WITH CARAMELIZED ONION
INGREDIENTS
- 800 g of desalted cod.
- 2 medium onions
- 3 medium potatoes
- 2 egg yolks
- 2 butter spoons
- 1 teaspoon of sugar
- 1 splash of vinegar
- flour, to coat
- olive oil
- salt and pepper
Preparation
1.- We make caramelized onions. To not extend too much, I leave the recipe of how to do it here (a new window will open)
2.- To make the garnish of the mashed potato: We put the potatoes whole and with skin to cook over medium heat in abundant water during 15 minutes. When they are cooked (we puncture the potatoes with a knife and, if it comes and goes well, they will be cooked) we peel them and put them in a bowl together with the butter at room temperature, the egg yolks and a pinch of salt. We mix and grind everything well with the help of a fork. It will leave a thick and very tasty puree.
3.- Finally we make the fried cod: We cut it into thick strips, about 3cm thick, we pass it through flour on all sides and fry it over high heat with plenty of olive oil.
4.- To place it, we put a base of the caramelized onion. On top we place the cod and one side of the plate, with the help of a mold (if we have it) our puree.
