This was so tasty!
After harvesting our first Purple Sweet Potatoes ever, we wanted to try them right away. I jumped into the kitchen and got cooking, and in this video we share the method that we used to make our homemade Purple Sweet Potato Fries. They're baked, not fried, and taste excellent!!! A very special thanks to Rob from Essayons Family Garden for supplying us with this great variety of sweet potato!

For your increasing family size, have you thought of getting a restaurant sized deep fryer?
We have bulked up on a few things..... not a bad idea.
With good oil, deep fryers are good food makers
Cook them up with green eggs and ham, perchance. :D
They would be quite a contrast against some green eggs... which I have eaten before.
