Time to reap what we've sown!!!

After being blessed with some Purple Sweet Potatoes from the Sapper Gardener over at Essayons Family Garden, we got to growing them. That was months ago... Today we were blessed to be able to finally peek beneath the soil and reap our harvest.

For us, growing natural, organic food here on our homestead is a huge blessing and an excellent decision. Plants like this truly make our garden an excellent food source, and help our homestead to truly be full of abundant harvests. We can't wait to grow more of these in the future. Thanks Rob & family!

Those are beauties. Never had great luck with sweets back in New England. Plants were great but tubers scrawny. Now potatoes were another story!

They're a different shape than the purple sweet potatoes we get here in Thailand (ours are longer and thinner) but man O man do we love them!! Roasted in the oven with a drizzle of oil, oregano and crushed garlic? We always cook loads more than we need cos NEXT DAY the cold diced purple roasted potatoes make a stunning salad base with rocket and fresh tomatoes. YUM.
