Decadent 3 Ingredient* HEALTHY Chocolate 'Moose'
When I was growing up, my family went out for dinner at a fine restaurant about once a month. In the Midwestern United States, that generally translated to a steakhouse or the equivalent. Everyone would be salivating all day long, giddy with anticipation, discussing the cut of beef, the entrees, the sides. Everyone, that is, but me. Well before we'd pile into the car, I could be found smiling, eyes glazed, unreachably focusing on the cartoon thought bubble floating directly over my head, which contained my sole objective for the evening: Chocolate Mousse. And like most kids - I assume - I had a running joke that it was made with fresh moose.
Light and dense. Velvety and rich. Creamy, chocolatey, and positively perfect. In my world, there was no other dessert that even came close. If it was on the menu, everything else faded into a dull bokeh. As a self confessed chocoholic, chocolate mousse was my prime rib.
These days I don't go to steakhouses. And to be honest, I rarely find a good chocolate mousse out there. But even when I do, the cost is generally pretty high - both to my wallet and to my health. So I've created my very own version, which I can enjoy at home anytime. Not only is it rich, creamy, decadent, and chocolatey, but its healthy and guilt free. Oh, and it's ridiculously easy to make. Plus I get to call it moose!
What you'll need:
- 16 Oz. plain 2% Greek yogurt - full fat will liquefy and fat free will be like chalky mud
- 2-3 heaping tbsp. fine, dark cocoa - Valrhona® is my favorite or Hershey® Special Dark® works well
- 10-12 drops Stevia or equivalent of your favorite sweetener - if you prefer sugar, I recommend powdered or simple syrup
How to make:
- Fold cocoa into cold yogurt by hand until thoroughly blended. The mixture will become very thick and lumpy at first. As you continue to mix, the cocoa will melt into the yogurt and become velvety smooth.
- Add your sweetener and continue folding until fully mixed.
- Refrigerate for at least one hour.
Makes 1-4 servings 😬
*If you want to crank it up a level, you can ad:
- vanilla
- orange zest
- strawberries
- raspberries
- mint leaves
- a dollop of fresh whipped cream
- CHERRIES , my personal favorite
